To setup the game, follow these steps:
1. Place the game board in the center of the playing area.[1]
2. Each player chooses a player color and places their corresponding pawn on or near the 0 space of the game board.[1]
3. Ensure the game is made up of Nigiri cards (used in every game), 1 type of rolls, 3 types of appetizers, 2 types of specials, and 1 type of dessert.[2][3]
4. (First time players only) Divide the cards according to type and place each type in a slot in the box.[1]
5. Together, decide which cards to use in the game.[1]
6. Find the menu tiles that correspond to the chosen cards and place them into their appropriate slots on the game board.[1]
7. (If playing with maki rolls in a 6-8 player game) Flip the maki rolls menu tile over to show the 6-8 player game scoring.[1]
8. Before each round, shuffle a group of face-down dessert cards into the main deck according to the following table:
* Round 1: 5 dessert cards (for 2-5 players) or 7 dessert cards (for 6-8 players).[2][3]
* Round 2: 3 dessert cards (for 2-5 players) or 5 dessert cards (for 6-8 players).[2][3]
* Round 3: 2 dessert cards (for 2-5 players) or 3 dessert cards (for 6-8 players).[2][3]
9. Shuffle the chosen dessert cards and place them in a face-down pile to one side of the board.[1]
10. Take all other chosen sets of cards and shuffle them together to form a face-down deck, which is also placed near the board.[1]
11. Deal cards face-down to each player based on the number of players:
